Duck Cassoulet.....Delicious!

Heather's Duck Cassoulet serves 8-10 people so is ideal for a New Year party with loads of crusty bread and good red wine!
You need:
1 kilo dried white haricot beans
250 grams pork rind
750 gram piece of unsmoked bacon
1 onion stuck with 3 cloves
2 onions sliced
250 grams tomatoes peeled and chopped
3 sliced carrots
4 crushed garlic cloves
3 chopped garlic cloves
3 sprigs of thyme
3 bay leaves
A bunch of parsley stalks
2-3 tablespoons of lard
300 grams of Toulouse sausages cut into pieces
1 duck 2 - 2 1/2 kilos cut into pieces
salt and pepper
4 tablespoons of tomato paste
425 mls dry white wine
300 grams of garlic sausage
50 grams of breadcrumbs
